The Auxerre vineyard forms the northern part of the Burgundian wine-growing region. It is therefore at the «gates» of the Champagne region as well as the Paris region, where it achieved its renown.The alliance of Chardonnay grapes, calcareous soil and fearsome Spring frost gives Chablis wine its unique character; its bouquet is dry, lively and fruit, with a suggestion of flint and freshly cut hay.
